Ingredients
  

Chaffle Batter

  • 3 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/3 cup almond flour
  • 1/3 cup low-carb sweetener like erythritol or monk fruit blend
  • 1/4 cup unsweetened cocoa powder
  • 2 ounces cream cheese softened
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 3 tbsp sugar-free chocolate chips

Instructions
 

  • Start by preheating your mini waffle iron. While it's warming up, gather your ingredients.
  • In a blender, combine the eggs, cottage cheese, softened cream cheese, vanilla extract, and your chosen low-carb sweetener.
  • Now, add the shredded mozzarella cheese, almond flour, unsweetened cocoa powder, and baking powder to the blender.
  • Blend everything together until the mixture is completely smooth. You might need to pause and scrape down the sides of the blender with a spoon.
  • Gently fold in the sugar-free chocolate chips by hand or briefly pulse in the blender until just combined.
  • Lightly grease your hot waffle iron. Spoon about 3 tablespoons of the batter onto the waffle iron.
  • Cook each chaffle until it reaches a beautiful deep brown color. Don't worry if your waffle iron's "ready" light turns on early; just ignore it until they are nicely browned.
  • Carefully remove the cooked chaffle and continue with the rest of the batter until all your delicious chaffles are made!
