Ingredients
  

  • 2 cups raw almonds
  • 1 cup unsweetened coconut flakes
  • 7 tbsp xylitol or allulose
  • 7 tbsp erythritol or allulose Use 1:1 sugar-substitute sweeteners; concentrated sweeteners won't work
  • 1/4 cup coconut cream or heavy cream if not dairy-free
  • 1 cup sugar-free chocolate chips

Instructions
 

  • Prep Your Pan: Begin by lining a 9x9 inch square baking pan with parchment paper, then lightly grease it with coconut oil. This makes removing your bars super easy!
  • Chop Your Mix-Ins: Gently pulse the almonds and coconut flakes in a food processor until they are coarsely chopped. Don't overdo it; you want some texture.
  • Whip Up the Syrup: In a saucepan, combine your chosen sweeteners and coconut cream. Place it over medium-high heat and bring to a rapid simmer. Stir frequently until the mixture thickens slightly and turns a beautiful golden hue. This is your binding magic!
  • Combine & Press: Remove the warm syrup from the heat. Quickly stir in your chopped almonds and coconut flakes, ensuring everything is well coated. Pour this delicious mixture into your prepared pan and press it down firmly and evenly with a spatula or the back of a spoon.
  • Add a Chocolate Touch: While the granola mixture is still warm in the pan, sprinkle the sugar-free chocolate chips generously over the top. The residual heat will gently melt them, making them stick perfectly.
  • Chill & Slice: Allow the bars to cool completely to room temperature. For best results, pop the pan into the refrigerator for at least 30 minutes to let them firm up.
