Easy Keto Peppermint Fudge 🍬

  • Rolling pin or hammer

Ingredients
  

  • 4 oz cream cheese at room temperature
  • 2 cups Swerve confectioners sugar
  • 0.5 tsp heavy whipping cream
  • 1 tsp peppermint extract
  • 10 crushed sugar-free peppermint candies (like Starlight Mints)

Instructions
 

  • Line a 6x9 inch (or similar size) square or rectangular pan with plastic wrap, making sure to leave some overhang on the sides. This simple step will make removing your fudge incredibly easy once it's set.
  • Place the sugar-free peppermint candies into a sturdy Ziplock bag. Gently tap them with a rolling pin or the side of a hammer until they are finely crushed. Be careful not to hit too hard to avoid tearing the bag!
  • In a mixing bowl, add the softened cream cheese, Swerve confectioners sugar, heavy whipping cream, and peppermint extract.
  • Using a spoon or your hands, mix all the ingredients together thoroughly until the mixture is creamy and well combined. It should be nice and smooth.
  • Add the crushed peppermint candies into the creamy mixture. Mix them in gently until they are evenly distributed throughout the fudge.
  • Transfer the fudge mixture into your prepared pan. Use the back of a spoon to firmly press it into all corners and smooth out the top surface for a neat finish.
  • Place the pan in the refrigerator and chill for at least 1 hour, or until the fudge becomes completely firm and easy to handle.
  • Once firm, simply lift the fudge out of the pan using the plastic wrap overhang. Place it on a cutting board and cut it into small, delicious squares. Serve and enjoy your refreshing, healthy treat!
