  • 1 tablespoon avocado oil or olive oil
  • 1 pound lean ground beef or ground turkey
  • 1 packet taco seasoning your favorite blend
  • 15 ounces jarred salsa
  • 15 small flour tortillas street taco size, choose low-carb for a healthier option
  • 4 cups shredded Colby jack cheese or a Mexican cheese blend

Instructions
 

  • Get Ready: Preheat your oven to 400°F (200°C). Lightly spray a 9x13 inch baking dish with cooking spray to prevent sticking.
  • Cook the Meat: Heat the oil in a large skillet over medium heat. Add the ground beef or turkey and cook, breaking it apart with a spoon, until it's fully browned and no longer pink (about 8 minutes). Drain any excess grease to keep your lasagna lean and healthy.
  • Flavor Blast: Stir in the taco seasoning and the entire jar of salsa with the cooked meat. This creates a delicious, ready-to-go filling with minimal effort! Remove the skillet from the heat.
  • First Layer: Arrange 5 tortillas in an even layer at the bottom of your prepared baking dish. Don't worry if they overlap a bit.
  • Meat & Cheese Stack: Spoon about one-third of your flavorful meat mixture evenly over the tortillas. Then, sprinkle about 1 â…“ cups of shredded cheese on top.
  • Build It Up: Repeat the layering process two more times! Add another 5 tortillas, followed by another third of the meat mixture, and another 1 â…“ cups of cheese. Finish with the last 5 tortillas, the remaining meat mixture, and the last of the shredded cheese. You'll have three delicious layers!
  • Bake to Perfection: Place the uncovered dish into your preheated oven and bake for 20 minutes. The cheese will become golden, bubbly, and incredibly irresistible around the edges.
  • Serve & Enjoy: Carefully remove the lasagna from the oven. Let it cool for a few minutes before cutting into 8 generous servings. Serve with your favorite fresh toppings like a dollop of sour cream, diced tomatoes, or sliced green onions for an extra burst of freshness and flavor!
