Equipment

  • 8x8-inch baking dish

Ingredients

  • 1/2 cup unsalted butter softened
  • 1/2 cup unsulphured molasses
  • 1/2 cup packed brown sugar
  • 1/2 cup sour cream (or plain whole milk Greek yogurt for a lighter option)
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • 1/8 teaspoon ground nutmeg

Instructions

  • Start by preheating your oven to 350°F (175°C). Lightly grease an 8x8 inch baking dish; this ensures your delicious cake won't stick!
  • In a large mixing bowl, combine the softened butter, rich molasses, and brown sugar. Beat them together until the mixture is wonderfully smooth and creamy.
  • Next, gently mix in the sour cream (or Greek yogurt for a healthier touch) and the egg until they are fully blended.
  • Now, add all your dry ingredients: the flour, baking powder, baking soda, salt, cinnamon, allspice, and nutmeg. Mix on a low speed just until everything is combined. Don't overmix! The batter will be delightfully thick.
  • Carefully spread this thick, fragrant batter evenly into your prepared baking dish.
  • Bake for about 30 to 35 minutes. You'll know it's ready when a toothpick inserted into the center comes out clean, signaling a perfectly cooked, moist cake. Let it cool slightly before enjoying!
