Ingredients
  

  • 2 tablespoons salted butter
  • 1/4 cup chopped onion
  • 1 rib celery finely chopped
  • 1/2 teaspoon salt
  • 1 clove garlic minced
  • 2 cups chicken broth
  • 1 tablespoon tomato paste
  • 4 ounces cream cheese
  • 1 cup heavy whipping cream
  • 8 ounces hot smoked salmon chopped into bite-sized pieces
  • 2 tablespoons capers drained
  • 2 tablespoons chopped red onion for garnish (optional)

Instructions
 

  • Sauté the Veggies: In a large saucepan over medium heat, melt the butter. Add the chopped onion and celery, sprinkle with salt, and cook for about 5 minutes until they become tender.
  • Build the Broth: Stir in the minced garlic and cook for just one more minute until it's fragrant. Pour in the chicken broth and tomato paste, whisking until everything is well combined and comes to a gentle simmer.
  • Creamy Smoothness: Place the cream cheese in a blender. Carefully add some of the hot broth mixture from the saucepan into the blender and blend until it's completely smooth.
  • Combine & Warm: Pour the creamy mixture back into the saucepan. Stir in the heavy cream, the chopped smoked salmon, and the drained capers. Let it simmer gently over medium-low heat for a few minutes, just until everything is warmed through.
  • Serve It Up: Ladle your comforting chowder into bowls. Garnish each serving with a sprinkle of fresh chopped red onion, if desired, and enjoy!
