Ingredients
  

  • 4 small boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 red bell pepper seeded and thinly sliced
  • 1 green bell pepper seeded and thinly sliced
  • 1 medium yellow onion thinly sliced
  • 1 cup shredded mozzarella cheese
  • Fresh cilantro chopped (for garnish)

Fajita Seasoning Blend

  • 1 teaspoon cumin powder
  • 1 1/2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 1 tablespoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  • In a small bowl, mix together all the Fajita Seasoning ingredients. Rub most of this savory blend generously over the chicken breasts, setting a little aside for your vegetables.
  • Arrange the seasoned chicken breasts in the prepared baking dish. Drizzle with olive oil, then layer the vibrant bell peppers and sliced onion over the chicken. Sprinkle the reserved seasoning blend evenly over the vegetables.
  • Finish by scattering the shredded mozzarella cheese generously over everything.
  • Bake for 25-30 minutes, or until the chicken is thoroughly cooked through and tender. Cooking time may vary based on the thickness of your chicken breasts.
  • For a golden, crispy topping, carefully broil for an additional 2 minutes. Garnish with fresh chopped cilantro just before serving this wholesome meal.
