Ingredients
  

  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons melted coconut oil
  • 1 tablespoon keto-friendly granulated sweetener (like Swerve)
  • 2 tablespoons almond flour
  • 7 tablespoons desiccated coconut (6 tablespoons for mixture, 1 tablespoon for rolling)
  • 1.5 teaspoons rum (or rum extract for an alcohol-free version)

Instructions
 

  • In a medium-sized bowl, combine all the dry ingredients: cocoa powder, sweetener, almond flour, and the main portion of desiccated coconut. Mix them thoroughly until well combined.
  • Now, pour in the rum and the melted coconut oil. Mix everything together until a moist, workable dough forms. If the mixture feels too wet, add a little more desiccated coconut. If it's too dry, a tiny bit more melted coconut oil or water will help.
  • Using your hands, roll the mixture into 8 small balls, each weighing about 12 grams.
  • Gently roll each ball in the reserved 1 tablespoon of desiccated coconut to coat them. Place these delightful treats onto a tray or plate.
  • Refrigerate for at least 30 minutes to allow them to firm up.
  • Serve these delicious rum balls chilled directly from the fridge and enjoy your healthy holiday treat!
