Ingredients
  

Doner Kebab Meat

  • 1 medium yellow onion
  • 4 cloves garlic
  • 1 pound ground chicken extra lean
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1 tablespoon Italian seasoning
  • 1 tablespoon sumac
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon coriander
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon olive oil
  • 1 lemon for juice, optional for crisping meat

Creamy Garlic Sauce

  • 0.5 cup light mayonnaise
  • 0.33 cup plain Greek yogurt
  • 3-4 cloves garlic minced
  • 2 teaspoons garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2-3 tablespoons water for thinning

For Serving

  • 4 lavish wraps or pita bread, lettuce cups
  • Fresh lettuce
  • Diced tomatoes
  • Sliced pickles
  • Sliced red onions or pickled red onions
  • Sliced jalapeños optional

Instructions
 

  • Start by adding the onion and garlic cloves into a small food processor. Blend them until you have a smooth, pulpy mixture. This step is key for amazing flavor and moisture in your meat!
  • In a large bowl, combine your ground chicken, the blended onion-garlic pulp, salt, black pepper, cumin, garlic powder, paprika, Italian seasoning, sumac, cinnamon, coriander, Greek yogurt, and olive oil. Use your hands to thoroughly mix everything together until it's perfectly combined.
  • Divide your meat mixture into three equal portions. Place one portion on a sheet of parchment paper, then cover it with another sheet. Using a rolling pin, flatten the meat into a thin, even layer. Repeat this process with the remaining two portions.
  • Starting from the long side of the parchment paper, carefully fold the paper over the meat and continue rolling it tightly until it forms a long, flat rope. This helps the doner cook evenly and perfectly.
  • Lay your parchment-wrapped meat rolls onto a baking sheet. Pop them into a preheated oven at 400°F (200°C) and bake for about 30 minutes, or until the meat is fully cooked through.
  • Once baked, let the rolls cool down a bit. Then, unroll the parchment paper and break the cooked meat into delicious strips or bite-sized pieces.
  • To get that authentic doner texture, squeeze a little fresh lemon juice over the meat (this really brightens the flavors!). Spread the meat pieces back out on the baking sheet and return it to the oven for a few minutes until they turn lightly golden and crispy. An air fryer works wonderfully here too for an extra-crispy finish!
  • While your meat is crisping, mix all the ingredients for the creamy garlic sauce in a small bowl: light mayonnaise, Greek yogurt, minced garlic, garlic powder, salt, and black pepper. Stir it all together, adding 2-3 tablespoons of water to thin the sauce to your preferred consistency.
  • Build your delicious doner! Pile the warm, crispy meat into lavish wraps, pita bread, or a fresh bowl with crisp lettuce, juicy diced tomatoes, tangy pickles, zesty sliced red onions, and a sprinkle of jalapeños if you like a little heat. Drizzle generously with your homemade garlic sauce and enjoy!
