Ingredients
  

  • 1.5 pounds thin-sliced boneless, skinless chicken breasts (about 4 breasts)
  • 0.5 cup ketchup
  • 0.25 cup reduced sodium soy sauce
  • 0.25 cup packed light brown sugar
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon ground ginger
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 fresh pineapple cleaned, cored, and sliced into about 8 one-inch wide long spears
  • Thinly sliced green onions optional for garnish

Instructions
 

  • In a large zip-top plastic bag, combine the chicken breasts with ketchup, soy sauce, brown sugar, olive oil, lemon juice, ground ginger, salt, and black pepper. Seal the bag securely and gently massage it to ensure the chicken is thoroughly coated. Place the bag in the refrigerator and allow it to marinate for at least 30 minutes, or for the best flavor and tenderness, marinate overnight.
  • While the chicken is marinating (during the last 15 minutes of the marinating time), lightly oil your grill grates to prevent sticking. Preheat your grill to a medium-high heat setting.
  • Carefully remove the chicken from the marinade and place it directly onto the preheated grill. Next, briefly dip the fresh pineapple spears into any remaining marinade in the bag to give them a light coating, then arrange them on the grill alongside the chicken. Discard any leftover marinade in the bag.
  • Grill the chicken for approximately 5 minutes on the first side, keeping the grill lid closed to lock in moisture. Flip the chicken and continue to cook for another 4 to 5 minutes on the second side, or until the chicken is thoroughly cooked through and reaches an internal temperature of 165°F (74°C).
  • While the chicken is cooking, remember to rotate the pineapple spears every 2 to 3 minutes. This ensures all sides develop beautiful grill marks and become wonderfully caramelized. This step also ensures any contact with raw chicken marinade is thoroughly cooked.
  • For an extra touch of freshness and color, optionally garnish your grilled chicken with thinly sliced green onions. Serve this delicious and healthy summer meal immediately and enjoy!
