Ingredients
  

  • 1 cup almond flour
  • 3 tbsp coconut flour
  • 1/4 cup Joy Filled Eats Sweetener or preferred keto sweetener
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • salt Pinch
  • 5 tbsp butter melted
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup apples peeled and chopped

Instructions
 

  • Begin by preheating your oven to 350°F (175°C). Line 8 cups of a standard muffin tin with paper liners and give them a light spray with cooking oil for easy removal.
  • In a large bowl, simply stir together the almond flour, coconut flour, sweetener, cinnamon, baking powder, and salt until well combined.
  • Next, pour in the melted butter, sour cream, eggs, and vanilla extract. Mix everything well until just combined, ensuring no dry spots remain.
  • Gently fold in the chopped apples, distributing them evenly throughout the batter.
  • Divide the delicious batter evenly among the 8 prepared muffin cups.
  • Bake for 25 to 30 minutes, or until the tops are beautifully golden brown and spring back when lightly touched. Let them cool slightly before enjoying!
