- 1 cup almond flour
- 3 tbsp coconut flour
- 1/4 cup Joy Filled Eats Sweetener or preferred keto sweetener
- 2 tsp cinnamon
- 1 tsp baking powder
- salt Pinch
- 5 tbsp butter melted
- 1/2 cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup apples peeled and chopped
Begin by preheating your oven to 350°F (175°C). Line 8 cups of a standard muffin tin with paper liners and give them a light spray with cooking oil for easy removal.
In a large bowl, simply stir together the almond flour, coconut flour, sweetener, cinnamon, baking powder, and salt until well combined.
Next, pour in the melted butter, sour cream, eggs, and vanilla extract. Mix everything well until just combined, ensuring no dry spots remain.
Gently fold in the chopped apples, distributing them evenly throughout the batter.
