Ingredients
  

Fruity Filling

  • 1 cup blueberries (148g)
  • 2 tbsp water
  • 1/4 cup allulose sweetener (50g)
  • 1/4 tsp glucomannan or xanthan gum

Crust

  • 1 3/4 cups almond flour (196g)
  • 3/4 cup shredded coconut (60g)
  • 1/2 cup erythritol sweetener (100g)
  • 2 tbsp coconut flour (14.2g)
  • 1/2 tsp salt
  • 6 tbsp melted butter (85.21g)
  • 1/2 tsp vanilla extract

Instructions
 

  • Combine the fresh blueberries, allulose sweetener, and water in a medium saucepan. Bring to a gentle boil, then lower the heat and simmer for about 10 minutes until the berries soften. Lightly mash them with a spoon.
  • Sprinkle the glucomannan or xanthan gum over the blueberry mixture and whisk vigorously until well combined and slightly thickened. Set aside to cool.
  • Preheat your oven to 350°F (175°C). Lightly grease an 8x8 inch metal baking pan.
  • In a spacious bowl, whisk together the almond flour, shredded coconut, erythritol sweetener, coconut flour, and salt.
  • Pour in the melted butter and vanilla extract. Stir until the mixture starts to clump together.
  • Press half of the crust mixture firmly into the bottom of the prepared baking pan, creating an even layer. Bake for 10 minutes, then take it out and let cool for another 10 minutes.
  • Carefully spread the cooled blueberry filling evenly over the partially baked crust.
  • Gently crumble the remaining crust mixture over the blueberry layer. Lightly press it down to ensure it adheres nicely.
  • Bake for another 20 to 25 minutes, or until the top is beautifully golden and the filling looks bubbly. Let them cool completely before slicing and enjoying.
