Ingredients
  

  • 3/4 cup coconut flour
  • 2/3 cup brown sugar replacement (or your favorite low-carb sweetener)
  • 1/3 cup unflavored whey protein powder
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter melted
  • 6 large eggs
  • 2 teaspoons freshly grated orange zest
  • 1 teaspoon orange extract
  • 1/2 teaspoon vanilla extract
  • 1/3 cup water
  • 1 cup fresh cranberries chopped in half
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease an 8x4 inch loaf pan; a 9x5 inch pan also works, just keep an eye on the baking time as it might bake faster!
  • In a spacious mixing bowl, whisk together the coconut flour, brown sugar replacement, protein powder, baking powder, and salt until they're nicely combined.
  • Add the melted butter, eggs, fragrant orange zest, orange extract, and vanilla extract to the dry mix, stirring until everything is well combined. Gradually stir in the water until you have a smooth, easily spreadable batter. If it seems too thick, simply add a tablespoon or two more water until it's just right.
  • Gently fold in the chopped cranberries and walnuts (if you're using them) into the batter. Pour this lovely batter into your prepared loaf pan and smooth out the top evenly.
  • Bake for 50 to 60 minutes, or until the top is golden brown and springs back slightly when gently touched. Let the bread cool in the pan for at least 30 minutes. Then, carefully run a knife around the edges, transfer the bread to a wire rack, and let it cool completely before slicing and enjoying!
