Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, cook the ground beef, ¾ cup of mushrooms, and chopped onion until beef is browned and onions are translucent. Avoid overcooking to keep it moist.
Drain excess fat from the skillet.
Mix in sour cream, beef broth, paprika, salt, and pepper; simmer briefly until slightly thickened.
Transfer the mixture into a greased 9×13-inch baking dish. Sprinkle shredded mozzarella over the top, followed by cheddar, then arrange the remaining ¼ cup of sliced mushrooms on the surface.
Bake for 25 to 30 minutes until bubbling and golden.
