Ingredients
  

  • 2 cups heavy cream
  • 7 ounces sugar-free white chocolate chips
  • 1/2 cup monk fruit/allulose sweetener
  • 1/3 cup pumpkin puree
  • 1/3 cup butter
  • 2 teaspoons sugar-free maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice

Instructions
 

  • In a skillet over medium heat, melt the butter. Once melted, pour in the sugar-free sweetener and heavy cream.
  • Reduce the heat to low and let it simmer gently for 20-30 minutes, stirring occasionally. This step is crucial for perfect fudge! The mixture should thicken enough to coat the back of a spoon and leave a clean line when you swipe your finger across it. It will also develop a light caramel smell and color. Aim for about 1 3/4 cups of reduced liquid.
  • While whisking often, add the sugar-free white chocolate chips, pumpkin puree, sugar-free maple syrup, and pumpkin pie spice to the skillet.
  • Once the chocolate is fully melted and all ingredients are smoothly combined, remove from heat and stir in the vanilla extract.
  • Carefully pour the mixture into an 8x8 inch baking dish lined with parchment paper (make sure the paper hangs over the sides for easy removal).
  • Freeze for at least 2 hours, or overnight for firmer squares, before slicing into delicious fudge pieces and serving.
