Instructions
Preheat your mini waffle maker. In a small bowl, combine all the chaffle ingredients: egg, mozzarella, almond flour, cream cheese, your chosen low-carb sweetener, and baking powder.
Lightly grease your preheated waffle maker with a non-stick spray. Pour half of your prepared chaffle batter into the maker. Cook until the light indicates it's done, or the automatic timer goes off. Repeat with the remaining batter to make a second chaffle. Set these aside to cool slightly.
While your chaffles are cooling, prepare the delicious keto whipped cream. In a separate bowl, use a hand mixer on high speed to whip together the heavy whipping cream, your preferred low-carb sweetener, and vanilla extract. Continue mixing until firm, fluffy peaks formโthis usually takes about 5 minutes.
Once your chaffles are cool and your whipped cream is ready, it's time to layer! Place one chaffle, top with a generous dollop of the fresh keto whipped cream, and add some sliced strawberries. Repeat with the second chaffle, more whipped cream, and the remaining strawberries.
