Instructions
Heat olive oil in a pot over medium-low heat. Add chopped onion and cook until translucent.
Stir in garlic and cook until fragrant.
Mix in oregano, cumin, salt, pepper, paprika, and cayenne (if using), cooking for 1 minute.
Pour in chicken stock and green chiles, stirring well.
Bring to a gentle boil, then reduce to simmer uncovered for 25 minutes, stirring occasionally.
Lower heat to medium, add cream, cream cheese, and shredded chicken.
Cook for 10-15 minutes until heated through and cheese melts. Serve hot with toppings as desired.
