Ingredients
  

  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 small onion chopped
  • 1 tsp oregano
  • 1.5 tsp cumin
  • 1 tsp salt
  • 0.5 tsp pepper
  • 0.5 tsp paprika
  • 0.25 tsp cayenne pepper (optional)
  • 4 cups chicken stock
  • 4 oz green chiles can
  • 0.5 cup heavy whipping cream
  • 4 oz cream cheese cubed
  • 3 cups shredded rotisserie chicken

Instructions
 

  • Heat olive oil in a pot over medium-low heat. Add chopped onion and cook until translucent.
  • Stir in garlic and cook until fragrant.
  • Mix in oregano, cumin, salt, pepper, paprika, and cayenne (if using), cooking for 1 minute.
  • Pour in chicken stock and green chiles, stirring well.
  • Bring to a gentle boil, then reduce to simmer uncovered for 25 minutes, stirring occasionally.
  • Lower heat to medium, add cream, cream cheese, and shredded chicken.
  • Cook for 10-15 minutes until heated through and cheese melts. Serve hot with toppings as desired.
