Ingredients
  

Wet Ingredients

  • 0.5 cup pumpkin puree
  • 0.5 cup creamy nut butter
  • 0.33 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp fresh lemon zest

Dry Ingredients

  • 0.25 cup unsweetened shredded coconut
  • 1.5 cups gluten-free rolled oats
  • 2 scoops vanilla protein powder (about 60g total)
  • 0.33 cup mini white chocolate chips

Instructions
 

  • In a large mixing bowl, combine all the wet ingredients: pumpkin puree, creamy nut butter, maple syrup, vanilla extract, and fresh lemon zest. Stir them together until everything is smooth and well blended.
  • Next, add your dry ingredients to the bowl: the gluten-free rolled oats, vanilla protein powder, and shredded coconut. Mix everything thoroughly until it forms a thick, sticky "dough" consistency.
  • Gently fold in the mini white chocolate chips, making sure they are evenly distributed throughout the mixture.
  • Scoop out about a tablespoon of the mixture at a time and roll it neatly between your palms to form bite-sized balls. Place them on a plate or a parchment-lined baking sheet.
  • Pop your energy balls into the refrigerator for at least 30 minutes to 1 hour. This chill time helps them firm up perfectly and brings out all the fresh, delicious summer flavors. Once firm, they're ready to enjoy as a healthy, refreshing snack!
