Ingredients
  

  • 1 large egg
  • 1 heaping tablespoon almond flour
  • 1/2 cup shredded mozzarella cheese (plus extra for topping)
  • 1 tablespoon grated Parmesan cheese
  • 1/8 teaspoon Italian seasoning
  • 1/8 teaspoon garlic powder
  • low-carb pizza sauce (for topping)
  • low-carb pizza toppings (e.g., pepperoni, mushrooms, olives)

Instructions
 

  • First, preheat your oven to 400°F (200°C) and warm up your mini waffle maker.
  • In a small bowl, whisk together the egg, almond flour, 1/2 cup mozzarella, Parmesan, Italian seasoning, and garlic powder until everything is well combined and smooth.
  • Once your mini waffle maker is hot, sprinkle a tiny bit of shredded mozzarella onto the griddle. Pour half of your prepared batter over the cheese, then sprinkle a bit more cheese on top. Close the lid and cook for 3-5 minutes, or until golden and crispy and your waffle maker indicates it's done. Repeat this process for the second mini pizza crust.
  • Carefully remove the crispy chaffle crusts from the waffle maker and place them on a baking sheet. Let them cool for a few minutes; this helps them stay firm and prevents toppings from making them soggy.
  • Once slightly cooled, spread a thin layer of low-carb pizza sauce on each chaffle crust. Top with additional shredded cheese and your favorite healthy low-carb pizza toppings.
  • Bake in the preheated 400°F (200°C) oven for 3-4 minutes, then turn on the broiler for an extra 1-2 minutes until the cheese is bubbly and lightly browned. Enjoy your easy, healthy mini pizzas!
