Ingredients
  

For the Easy Almond Crust

  • 2 cups almond flour

  • 1 teaspoon cinnamon
  • 4 tablespoons powdered sweetener e.g., allulose, erythritol
  • 0.33 cup unsalted butter melted

For the Zesty Key Lime Filling

  • 1.25 cups full-fat cream cheese softened to room temperature
  • 0.75 cup heavy cream
  • 1 cup sugar-free condensed milk homemade or store-bought
  • 0.5 cup fresh lime juice from 3-4 regular limes
  • 1 sachet unflavored gelatin powder (12g or 2 teaspoons)

For the Whipped Topping & Garnish

  • 0.33 cup heavy cream for topping
  • 1 tablespoon powdered sweetener for topping
  • Fresh lime slices for garnish
  • 1 lime grated zest, for garnish

Instructions
 

  • For the Easy Almond Crust:

  • 1. Toast Almond Flour: In a dry frying pan over medium heat, gently toast the almond flour, stirring often, until it turns a light golden color. This step enhances the flavor and makes it taste like a delicious keto cookie crumb! Let it cool completely.
  • 2. Mix Dry Ingredients: In a mixing bowl, combine the cooled almond flour with the salt, cinnamon, and 4 tablespoons of powdered sweetener. Whisk them together until well blended.
  • 3. Add Butter & Form Crust: Pour in the melted butter and stir with a fork until a crumbly dough forms.
  • 4. Press into Pan: Line the bottom of an 8-inch pie pan (a loose-bottom pan works best!) with parchment paper and lightly grease the sides. Evenly press the crumb mixture firmly into the bottom of the pie dish to form your crust.
  • For the Zesty Key Lime Filling:

  • 1. Prepare Gelatin: Warm the lime juice in the microwave for about 30 seconds, or until it's just warm to the touch. Add the unflavored gelatin powder and stir continuously until it’s completely dissolved. Set aside.
  • 2. Whip Cream Cheese: In a large bowl, use a hand mixer to beat the room temperature cream cheese until it's wonderfully smooth and creamy with no lumps.
  • 3. Combine Filling: Add the sugar-free condensed milk to the cream cheese and blend well. Next, pour in the warm lime juice with the dissolved gelatin. Beat all these ingredients together until the mixture is perfectly smooth.
  • 4. Add Heavy Cream: Finally, add ¾ cup of heavy cream and beat with the hand mixer for about 1-2 minutes until the filling becomes thick, luxurious, and holds its shape. (Feel free to taste and add a bit more powdered sweetener if you prefer a sweeter pie!)
  • 5. Assemble & Chill: Carefully pour the creamy key lime filling over your prepared crust in the pie dish, spreading it evenly to the edges. Place the pie in the fridge and let it chill for a minimum of 6 hours, or ideally overnight, to ensure it sets beautifully.
  • For the Whipped Topping & Garnish:

  • 1. Whip Topping Cream: In a clean bowl, whip the remaining ⅓ cup of heavy cream with 1 tablespoon of powdered sweetener until soft peaks form.
  • 2. Decorate & Enjoy: Transfer the whipped cream to a piping bag (or simply use a spoon) and beautifully decorate the chilled pie. Finish with fresh lime slices and a sprinkle of grated lime zest before serving this delightful, healthy, and easy summer treat!
