Ingredients
  

  • 2 2/3 cups All-purpose flour 337g
  • 1 tbsp Pumpkin spice
  • 0.5 tsp Salt
  • 3 oz Cream cheese 86g, room temperature
  • 12 tbsp Unsalted butter 6oz, room temperature
  • 0.5 cup Granulated sugar 110g
  • 0.5 cup Brown sugar 112g, packed
  • 1 large Large egg yolk room temperature
  • 1 tsp Vanilla extract
  • 0.33 cup Coarse sugar for rolling 78g
  • 1 large Large egg room temperature
  • 0.25 cup Brown sugar 56g
  • pinch Table salt
  • 0.5 tsp Pumpkin spice
  • 0.25 cup Whole milk 2oz
  • 0.5 cup Pumpkin puree 122g
  • 0.25 tsp Vanilla extract
  • Whipped cream optional

Instructions
 

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  • Mix flour, pumpkin spice, and salt in a bowl.
  • Cream together butter, cream cheese, sugars, egg yolk, and vanilla until smooth.
  • Gradually add dry ingredients, then incorporate pumpkin puree and milk.
  • Shape dough into small balls, roll in coarse sugar, and place on baking sheet.
  • Flatten slightly and brush with beaten egg.
  • Bake for 15 minutes until golden.
  • Let cool and serve with whipped cream if desired.
