- 1/4 cup mayonnaise
- 1 teaspoon dried parsley

- 1 cup crumbled feta cheese divided
- 3 cups cooked, cubed chicken (about 1.5 pounds)
- 3 cups fresh spinach chopped
- 1 large tomato chopped
- 1 green onion thinly sliced
Cauliflower Base
- 16 ounces cooked cauliflower rice (or finely chopped raw cauliflower)
- 1/2 teaspoon salt (for cauliflower base)
- 1 teaspoon minced garlic (for cauliflower base)
