Ingredients
  

  • 2 cups English or Persian cucumbers sliced
  • 0.5 cup shredded sharp cheddar cheese
  • 0.33 cup cooked bacon, crumbled (for a lighter option, use turkey bacon)
  • 0.5 cup light sour cream (or plain Greek yogurt for extra protein)
  • 1 tbsp dry ranch seasoning mix
  • 2 tbsp finely chopped red onion
  • 1-2 tbsp fresh dill chopped (or 1 tsp dried dill)
  • Salt & black pepper to taste

Instructions
 

  • If using regular bacon, cook until crispy, then crumble and set aside to cool. (Skip this step if using pre-cooked or turkey bacon).
  • Slice your cucumbers into ¼-inch rounds. There's no need to peel if using English or mini varieties!
  • In a small bowl, whisk together the light sour cream (or Greek yogurt) and ranch seasoning mix until smooth and creamy.
  • In a large mixing bowl, gently combine the sliced cucumbers, shredded cheddar, crumbled bacon, chopped red onion, and fresh dill.
  • Pour the creamy ranch dressing over the ingredients and toss gently until everything is evenly coated.
  • Season with a pinch of salt and black pepper to your liking. Serve immediately for a fresh crunch, or chill for 10-15 minutes to let the flavors meld perfectly. Enjoy!
