Speedy French Onion Chicken & Rice in the Instant Pot

2medium-largeboneless, skinless chicken breastseach cut into 3 pieces

2 1/2cupslow-sodium chicken broth
1packetLipton onion soup mix(1 ounce)
2cupshomemade or low-fat condensed cream of chicken soup(or 1 can condensed soup + 1 can water)
1/2cupFrench onion sour cream dip(or regular sour cream for a lighter option)
1cupshredded mozzarella cheese

Instructions
Place the lean chicken pieces, white rice, and low-sodium chicken broth directly into your Instant Pot. Stir in the onion soup mix until everything is well combined.
Secure the lid on your Instant Pot and make sure the vent is set to the sealed position. Cook on High Pressure for just 3 minutes.
Once cooking is complete, allow a Natural Pressure Release. This means letting the pressure release on its own until the float valve drops, which takes about 20-25 minutes. This step is key for perfectly cooked rice and tender chicken!
Carefully remove the lid. Take out the cooked chicken pieces and place them on a cutting board. In a separate bowl, whisk together the cream of chicken soup and French onion dip (or opt for plain sour cream for a lighter touch!).
Pour this creamy mixture and the shredded mozzarella cheese into the Instant Pot with the rice. Stir gently until the cheese is melted and the rice mixture is wonderfully creamy and well combined.
