Ingredients
  

  • 0.5 cup chia seeds
  • 1.5 cups unsweetened almond milk
  • 2 tablespoons pure maple syrup
  • 0.5 teaspoon vanilla extract
  • 2 shots espresso divided
  • 2 cups plain Greek yogurt divided
  • cocoa powder for dusting
  • dark chocolate shavings

Instructions
 

  • In a medium-sized bowl, combine the chia seeds, almond milk, maple syrup, vanilla extract, one shot of espresso, and 1 cup of plain Greek yogurt. Stir everything very well to make sure the chia seeds are evenly distributed and don't clump. Let the mixture sit for about 5 minutes, then give it another good stir.
  • Once mixed, cover the bowl and place it in the fridge. Allow it to chill for at least an hour, but for the best creamy texture and flavor, it's wonderful if left overnight. The chia seeds will transform the liquid into a thick, pudding-like consistency.
  • While your chia pudding is setting up, prepare the delicious coffee layer. In a separate small bowl, mix the remaining one shot of espresso with the remaining 1 cup of plain Greek yogurt until smooth and well combined.
  • Once the chia pudding is ready, spoon it evenly into the bottom of three serving glasses. Next, carefully add the espresso-infused Greek yogurt layer on top.
  • To give your tiramisu chia pudding that authentic finish, lightly dust the top with cocoa powder or sprinkle some dark chocolate shavings.
  • You can enjoy this healthy and refreshing treat right away, or let it chill a bit longer for the flavors to meld even more deeply. Either way, you're in for a delightful and easy summer breakfast or snack!
