Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 tablespoon Italian seasoning
  • 0.5 cup gluten-free all-purpose flour (or regular AP flour)
  • 1 teaspoon baking powder
  • 1 cup shredded mozzarella cheese divided
  • 0.5 cup marinara sauce (or pizza sauce)
  • 12 turkey pepperoni slices chopped (optional, or use other toppings)

Instructions
 

  • Preheat your oven to a summery 400°F (200°C). Grab a baking sheet and line it with parchment paper for easy cleanup.
  • In a spacious mixing bowl, gently combine the cottage cheese, eggs, Italian seasoning, flour, baking powder, and half of the mozzarella cheese. Stir until everything is well blended and looks like a fluffy dough.
  • Scoop out about 6 equal portions of the mixture onto your prepared baking sheet. Lightly press each scoop down to create a flat, mini pizza base.
  • Spoon a little marinara sauce onto each bun. Sprinkle with the remaining mozzarella and add your chopped turkey pepperoni or favorite light summer toppings like finely diced bell peppers or zucchini!
  • Pop the baking sheet into the oven and bake for 25 to 28 minutes. You'll know they're ready when they're beautifully golden brown and the cheese is melted and bubbly.
  • Let your delicious pizza bites cool on the baking sheet for a few minutes before diving in. Perfect for a quick, healthy summer snack or meal!
