Ingredients
  

  • 1 medium strawberry diced
  • 1 tbsp cream cheese or Greek yogurt, softened
  • 1-3 tsp powdered erythritol to taste
  • powdered erythritol or Swerve, for dusting
  • 2 tbsp almond flour
  • 1 tsp almond flour
  • 2 tsp finely ground flaxseed meal or chia seeds/extra almond flour
  • 1 tbsp erythritol or Swerve
  • scant 1/4 tsp baking powder
  • 1 large egg yolk
  • 1 tbsp heavy cream or whole milk
  • 1/2 tsp clear vanilla extract
  • 1/2 tsp lemon juice or apple cider vinegar

Instructions
 

  • Grind the almond flour and flaxseed meal together for a smooth texture.
  • In a small bowl, mix the ground flours, baking powder, and sweetener thoroughly.
  • Add the egg yolk, vanilla extract, lemon juice, and heavy cream, then beat until smooth for about 30 seconds.
  • Spray a small coffee mug with cooking oil, pour in the batter, and fold in the diced strawberry.
  • Microwave for 60 seconds.
  • Meanwhile, mix the cream cheese with sweetener. Top the mug cake with the sweet cream cheese and dust with powdered sweetener. Enjoy!
