Instructions
Grind the almond flour and flaxseed meal together for a smooth texture.
In a small bowl, mix the ground flours, baking powder, and sweetener thoroughly.
Add the egg yolk, vanilla extract, lemon juice, and heavy cream, then beat until smooth for about 30 seconds.
Spray a small coffee mug with cooking oil, pour in the batter, and fold in the diced strawberry.
Microwave for 60 seconds.
Meanwhile, mix the cream cheese with sweetener. Top the mug cake with the sweet cream cheese and dust with powdered sweetener. Enjoy!
