Large mixing bowl
Large skillet
- 3 cans Tuna (5-ounce), well-drained (a mix of solid white albacore and chunk light is great!)
- 2 large Eggs whisked
- 1/3 cup Grated Parmesan cheese
- 1/4 cup Mayonnaise (or Greek yogurt for a lighter option)
- 1 tablespoon Dijon mustard
- 1 tablespoon Fresh Parsley chopped
- 1 tablespoon Lemon Zest (from 2-3 lemons)
- 1 teaspoon Garlic powder
- 1/4 teaspoon Sea Salt (adjust if your tuna is salty)
- 1/4 teaspoon Black Pepper
- 2 tablespoons Olive Oil
Start by thoroughly draining your canned tuna and flaking it apart with a fork in a large mixing bowl.
Gently add the whisked eggs, grated Parmesan cheese, creamy mayonnaise, Dijon mustard, fresh chopped parsley, bright lemon zest, garlic powder, sea salt, and black pepper to the tuna. Mix everything until just combined, being careful not to overmix.
Divide the mixture into 8 equal portions and carefully shape each into a patty about 1/2-inch thick (around 2.5-3 inches wide).
Heat the olive oil in a large skillet over medium heat. Once hot, carefully place the tuna patties in the pan, ensuring not to overcrowd it (cook in batches if needed). Cook for 3-4 minutes per side, until they turn beautifully golden brown and crispy. If they brown too quickly, just lower the heat slightly.
These tuna patties are incredibly versatile and can be served with a side salad, on a bun, or with a dipping sauce. Feel free to adjust seasonings to your taste.
