Wholesome Chicken & Rice Comfort Bake

A comforting and easy-to-make casserole featuring shredded chicken, brown rice, a creamy sauce, and a blend of vegetables, topped with plenty of melted cheddar cheese. Perfect for a hearty family dinner.

Ingredients
  

  • 2 cups cooked chicken, shredded like rotisserie chicken or lean baked chicken breast
  • 3 cups cooked brown rice or white rice for a quicker option
  • 1.5 cups cream of chicken soup homemade or one 10.75-ounce can, opt for a low-sodium version
  • 1 cup light sour cream or plain Greek yogurt for extra protein!
  • 3/4 cup milk any kind, dairy or non-dairy
  • 1 small onion finely diced
  • 1 bell pepper finely diced (any color!)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon seasoning salt or your favorite all-purpose seasoning blend
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded cheddar cheese light cheddar works great
  • Fresh parsley chopped, for garnish (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  • In a large bowl, combine the shredded chicken, cooked rice, cream of chicken soup, sour cream (or Greek yogurt), milk, diced onion, diced bell pepper, garlic powder, onion powder, seasoning salt, black pepper, and Parmesan cheese. Stir everything together until it's well combined.
  • Spoon the chicken and rice mixture evenly into your prepared baking dish.
  • Sprinkle the shredded cheddar cheese generously over the entire surface of the casserole.
  • Pop the dish into your preheated oven and bake for about 30 minutes. You'll know it's ready when the casserole is hot and bubbly, and the cheese on top is beautifully melted and lightly golden.
  • Carefully remove from the oven. If you like, sprinkle with fresh chopped parsley for a pop of color and freshness. Serve warm and enjoy your delicious, easy meal!
