Peanut Butter Base

  • 6 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt to taste
  • 2/3 cup powdered monk fruit allulose blend or preferred sugar-free powdered sweetener
  • 2/3 cup peanut flour ensure it's sugar-free

Chocolate Coating

  • 6 ounces sugar-free dark chocolate chips

  • Line a baking sheet with parchment paper. In a large mixing bowl, combine the natural peanut butter, melted butter, vanilla extract, and sea salt. Use a hand mixer to beat these ingredients until perfectly smooth.
  • Gradually add the powdered sweetener and peanut flour to the bowl. Continue mixing until everything is fully combined and the dough is smooth. If the mixture feels too soft or sticky, simply refrigerate it for about 20 minutes to firm up.
  • To prevent sticking, quickly rinse your hands under cold water. Use an extra-small cookie scoop to portion the peanut butter mixture, then roll each portion into a neat ball. Place the finished balls onto your prepared baking sheet. Work efficiently to keep them from getting too warm.
  • Place the baking sheet with the peanut butter balls into the refrigerator for approximately 20 minutes. This step is crucial for them to firm up before dipping.
  • Set up a double boiler by placing a heat-safe bowl over a saucepan with a small amount of simmering water (ensure the bowl doesn't touch the water). Add the sugar-free dark chocolate chips to the bowl and stir occasionally until they are completely melted and smooth.
  • Gently insert a toothpick into the center of each firm peanut butter ball. Dip each ball into the warm melted chocolate, leaving a small peek of peanut butter visible at the top. Return them to the baking sheet, carefully remove the toothpicks, and smooth over any small holes with your finger.
  • If you have any melted chocolate left, feel free to drizzle it over the dipped treats for an extra touch of elegance.
